There's a few things that people have trouble with when making vibrant cakes--some cakes fade in the oven, and others get brown on the bottom and sides where the cake was touching the pan. This prevents your cake from looking as vibrant as it can. Below are some things I do to help prevent these and get vibrant cake layers.​

  • Food coloring

    • The type of food coloring you use can determine whether or not your cakes will fade in the oven. Sometimes the standard liquid kind will fade, so I prefer using gel food coloring because it holds up better in the oven.

    • My preferred gel food coloring is Wilton Color Right Food Coloring System. If I want a standard color, instead of mixing my own, I will use Wilton Gel Icing Color.​

    • Vibrant cakes can take quite a bit of color, so make sure your cake batter is really vibrant before baking.

  • Cake Pans​​

    • I have thicker cake pans than you would find in a typical craft store, which help prevent browning of the sides of the cake and keep the color of the cake more vibrant. You can find the thicker cake pans here. If you are using standard pans, such as Wilton Cake Pans, I would recommend using â€‹Wilton Bake Even Strips. They help the cake rise more evenly and keep it from browning as much in the oven. You can also use these strips on cake pans with thicker walls, but it's not as necessary.
