swirls / "Swirly Dollops"

Before I get into the steps of piping multiple colors at once, I just wanted to give you some information that you might find helpful:

  • I'm using Italian meringue buttercream, but you can use the icing of your choice. If you'd like the recipe for the icing I'm using, you can click here.

  • To color the icing I used Wilton's Color Right Food Coloring System.

  • These instructions will show you how to pipe these swirly dollops. If you'd like to pipe multi-colored swirly dollops like you see in the image below, learn how to set up your piping bag, here, before continuing with this tutorial.

Supplies

Below are the supplies I used to do this technique:

Before beginning

Make and color your icing if desired.

Steps:

  1. Put your icing into a piping bag with a Wilton 1M tip attached.

  2. This next step is much easier to understand by watching, so I recommend the video below. If written instructions are helpful for you, I've attempted to explain it here:

    1. Hold your piping bag straight up with the tip hovering right above where you would like to have the dollop of icing. Squeeze the piping bag and start to twist your wrist counter-clockwise (almost as if you were mixing something in a bowl). Continue to pipe in a circular motion, and as you get closer to where you started, start to lift your hand slightly and move the tip inward slightly (while continuing that circular motion), creating slightly smaller circular motions after each rotation.

    2. When you reach the top, stop squeezing the piping bag and lift the bag up and away.
