Stained Glass Flowers Cake

Steps involved

  • Make cake layers

  • Make buttercream

  • Assemble and ice cake

  • Make royal icing

  • Pipe flowers onto cake

  • Add color dust to flowers

READ BEFORE CONTINUING: The following recipes are scaled to make the cake pictured above -- a 4 layer cake made with 6-inch round cake layers. If you wish to make a smaller cake, please scale down these recipes.

  • vanilla cake recipe

  • 1.5 - 2 batches Italian meringue buttercream

  • I made this buttercream strawberry flavored by adding 1/4 cup of strawberry reduction and a spash of strawberry flavor to my 1.5x batch (can add less or more to taste)

  • I always like to have extra buttercream rather than not enough, so if you're not sure how much to use, I would recommend 2

  • Royal icing (recipe below)


Royal icing


Ingredients:


  • 1.5 oz pasteurized egg whites (I used cartoned egg whites)

  • 1/2 tsp. vanilla extract

  • 2 cups powdered sugar

  • Black gel food coloring


  1. Whip egg whites until frothy.

  2. Add vanilla and whip to combine.

  3. Add powdered sugar gradually and mix until it's all incorporated.

  4. Mix on a high speed until stiff peaks form. (Will take about 5+ minutes)

  5. Add black gel food coloring until desired color is reached.

Colors used

To color the flowers I used Wilton Color Dust in goldenrod, deep pink, and purple.

For the royal icing I used 1-2 containers of Wilton Icing Color in black.

Decorating the cake

After the cake has been assembled, iced, and refrigerated:


  1. Optional: using a toothpick, sketch out the flowers you want to pipe onto the cake to make it easier for yourself to pipe them on later.

  2. Using a piping bag with a small round tip and the black royal icing, pipe flower outlines onto the cake. Let royal icing dry.

  3. In a small dish/shot glass mix a tiny bit of vodka with some of the pink color dust. Repeat for all colors.

  4. When the royal icing is dry, take a food safe brush and paint some color into the flower outlines. To deepen the color pack on some color dust while the "paint" is still wet.

  5. If icing starts to soften, place back into fridge and wait for it to firm up before continuing to paint. Continue filling in the flower outlines until completed.

  6. Slice and enjoy :)
